Summer Salad
Summer is here & it’s a beautiful time for a lot of fresh produce. Check out this recipe a friend introduced me to. I’m definitely no chef, so any recipes that are easy to execute are my jam.
INGREDIENTS
2 large heads of romaine lettuce (about 4-6 cups sliced)
1 cup cherry tomatoes (quartered)
1 cup chopped cucumbers
1 cup chopped artichoke hearts
2 cups pepperoncini (chopped)
1/4 cup diced red onions
1 cup cubed mozzarella
1 (15oz) can chickpeas (drained + rinsed)
1/2lb salami sliced 1/8” thick + cut into 1/4” ribbons
Italian Dressing:
2 to 3 medium cloves garlic (minced)
1/4c extra virgin olive oil
1/4c red wine vinegar
2 tbsp freshly squeezed lemon juice
2 tbsp dried oregano
1 tbsp dijon mustard
1.5 tsp kosher salt
1 tsp honey
1/4 tsp freshly ground black pepper
INSTRUCTIONS
Assemble the salad by placing romain in a large bowl
Top with,
chopped mozzarella
chopped salami
chickpeas
artichokes
cucumbers
pepperoncini
cherry tomatoes
red onions
Whisk the dressing together in a small bowl
Pour the dressing on top of the salad & gently toss
Top with parmesan if desired
